Nayith Morales Fierro, a young coffee producer from a coffee-farming family, cultivates Pink Bourbon on a one-hectare farm in San Agustín, Huila. Utilizing precise double fermentation, she enhances the clarity and depth of her coffee. Cherries undergo a 40-hour whole-fruit fermentation before being de-pulped and fermented again for another 40 hours in parchment. The slow drying process ensures a well-balanced and flavorful cup.
