Sidamo, located in southern Ethiopia, is celebrated for its exceptional speciality coffees. This lot from Bensa is produced by Testi Coffee, which employs meticulous processing techniques. The cherries are first immersed in water to remove floaters, then de-pulped and fermented for 48 hours, with fresh water replacing the old every 24 hours. Following fermentation, the coffee is dried on raised African beds for 21 days.
